xref #6303
follow-up on #6320

The production rollout of #6320 has been completed and this PR commits final pieces:

  • Updated prod variables
  • Removed Terraform variables that are no longer used
  • Updated docs for upgrading the cluster (this doc will be revised in the future once we have a chance to perform an actual upgrade)
