ci: Fix project automation

Currently the project automation is INOP due to GitHub migrating it from the repo level to the org level (https://github.com/flybywiresim/aircraft/projects/4 -> https://github.com/orgs/flybywiresim/projects/7) which caused the Project Automation action to break. An attempt to repair it was performed with #8860, however the issue persisted.

The action is to be removed with #8863 to prevent build failure warnings and action failure alerts. A new action or another solution is needed, but for now Project Automation will be done manually by me (and hopefully other maintainers😛)
